Roley Poley Casseroley??


I am the first person to admit that when I cook pasta I have absolutely no portion control. Meaning that, I have no concept of how much to cook, I know that it expands and grows, but for some reason if there's less than half a bag of pasta left I cook it all. Don't really know why, but it happens. So that is precisely what happened yesterday. Pasta for dinner turned into a casserole for a week.... well, at least 3 days! But it sure is delicious. Penne Rigate noodles, a basic sauce, with some sun dried tomatoes, roasted red peppers, chickpeas, and of course all the normal things that go into tomato sauce....and voila....Casserole for a week. And of course this meal came out of the pantry and fridge.




We both had seconds, and yet it still looked like we didn't even put a dent in it! Crazy I tell you!

The shriveled green thing on the left of the plate is a roasted and marinated jalapeno pepper. Momma G makes them every summer. We still have about 10 jars in the garage. But they sure are delicious.

Since I haven't been posting all the grub that we have been consuming (bad me), later on today I will post some of the pic's.

Oh YUM! I loooooove baked pasta things. Since I still eat cheese, that bubbly, lightly browned topping of stringy mozzarella is what it's all about. I'm not really very good at portioning dry pasta either. Leftovers heat up nice for lunches though.

Sorry that took so long....I had finals and a whole lot of mess going on!!! We still eat cheese too, so I know exactly what you're talking about! I find pasta is always better the net day, just like pizza ha ha ha!!
